I have setup Windows 2008 EE 64x on my laptop and got Hyper-V feature
enabled. Is it possible to create test VMs on it like XenServer 5.0 /
XenDesktop and VMWare ESX 3i ?

yes you can create vm on it.
as hyper-v role got enabled on your laptop.
then you can create vm on it.
